the feature in Acrobat that allows you to create a PDF from a web site is great. I sucked down the Flex 3 Help site with it, and use the file instead of the site. The only thing is this. To use it, you need a ton of hard drive space, and a fast connection to the internet. Otherwise, it takes FOREVER to download the site, and uses all of your processor space. So, only do it if you have the time.
